SUGARCEL by Sugarflair Colours is a high grade CMC (Carboxymethylcellulose) a synthetic replacement for Gum Tragacanth.

Gum Tragacanth also known as Gum Trag is a natural product that adds strength and stretch to sugar products. Gum trag can be used in modelling paste, flower paste and pastillage.  It gives a superior finish to modelled flowers allowing petals to be rolled and shaped very finely.

CMC does everything that Gum Trag does although there are mixed opinions on which does it better! The advantage with CMC is that it is whiter that Gum Trag so will not colour your paste (Gum Trag tends to give a creamy tone to your pastes), it is slightly cheaper but some people do not think it gives quite the same strength and elasticity as natural Gum Trag (me included!) It does however work out a little cheaper so as they say 'you pays your money and you takes your choice'!!

Knead in 1 teaspoon of gum into 225g (8oz) of sugarpaste, the gum needs time to work before the paste is used. You will begin to feel a difference in the paste after an hour or so, but it is best left overnight. Keep completely airtight to prevent drying out.
